when i was thumbing through the latest issue of people magazine and saw top chef’s hung huynh’s recipe for olive oil baked shrimp, i immediately penciled it in to the top of our “must try” list.   we cooked the shrimp last night for dinner and although they were a tad spicy, they were excellent! and very quick and easy to prepare. i highly recommend!

OLIVE OIL BAKED SHRIMP
* 2 lbs shrimp, peeled and deveined
* 3 tbsp garlic, chopped
* 1/4 cup extra virgin olive oil
* 4 tbsp. lemon juice
* 2 tsp salt
* 1 tbsp. red pepper flakes
* 3 tbsp parsley, chopped
* 1/4 cup fresh tomatoes, chopped
* 1/4 white wine

preheat oven to 375.  combine all ingredients in an oven safe saute pan and bake for 10 minutes.
