our friend avery, who is amazingly talented, is also a brilliant cook.  she posts pictures of her creations on her facebook page and we beg her for the recipe.  here’s one of her latest:

MOROCCAN COUS COUS
(sorry for the lack of measurements; we made 1 cup of cous cous and it served 4)

* 2 squash, chopped
* garlic, minced
* 1 orange bell pepper
* 1 yellow bell pepper
* 1 red bell pepper
* green onions, chopped
* olive oil
* 1 cup cous cous
* curry powder
* cinnamon

follow the directions on the box for the cous cous and set aside.  saute the garlic and squash in a little bit of olive oil for a few minutes.  then add the bell peppers and green onions and continue to cook for about another 5 minutes.  fluff the cous cous with a fork and then add the sauteed ingredients.  mix together.  then sprinkle in several dashes of curry powder and cinnamon.  mix until the cous cous is a nice yellow color.  taste and then add salt and pepper if necessary.
